"Are" defines plural, and "one way" is not plural. You could say "there are more than one, ways to kill a cat". But, there is more than one way, to kill a cat.

I have no idea what one is the right one but I grew up with "There's more than one way to skin a cat" For what it is worth.

The first is correct. The second is incorrect. There is only one way to skin that cat.

I think most people grew up saying, "There's more than one way to skin a cat." But, now that you point out the grammatical glitch, my faith in the English language is hanging in the balance. (Disclaimer: I myself, have never skinned a cat!!)

The "is" verb is singular as it refers the subject "way" which is also singular. There may be more than one way to skin a cat, but I don't advise it. Sounds gruesome. Are you cooking some exotic Oreintal dish?

There are two versions of this maxim. 1) There is (there's) more than one way to skin a cat. There is is referring to one way, so is singular 2) There are more ways to skin a cat. In this case, there are is referring to ways, which is plural
