unlike most things we deep fry pork chops don't come with deep frying instructions usually. Most things we deep fry in a true deep fryer you just drop and wait the alotted time and then yank them out. Done. Pork chops you need to watch. They will just start to float when their perfect. Don't overcook them. Yank them as soon as they bob the top. Hee hee I said bob.

Preheat oil to 375°F. Dip chops in flour, beaten eggs, then flour again. Drop into oil carefully fry 3 minutes one side and flip over. When it's nice and brown it's done. Be careful to not over cook it. It should take no longer than 4-6 minutes to cook at 375°

Heat your oil to at least 350-370, Then use a meat thermometer to make sure the pork chops are at 160 inside.
