There is a yellow cake recipe in the Betty Crocker Cookbook that my family has been using for three generations. I've never made it that is hasn't been moist and delicious. Maybe the problem is in the recipe you are using.

Try substituting applesauce and a tablespoon of oil for the shortening. This makes a moister cake or bread and is far more healthy than shortening.
