on a plane, as long as she has a passport she can say she's coming for a visit and stay for awhile

What citizenship is your girlfriend? If she is Canadian on a Canadian passport she can pass US Immigration within the Canadian airport and then fly in to the US as if on a domestic flight. If she isn't Canadian, then she can fly from Canada to the US but depending on her passport she may require a visa.

The Mexican border since no passport is needed if you cross anywhere except the border station.
