As a Marylander, I'm definitely fond of steamed crabs, but I prefer lobster these days. There's more meat in lobster and you don't have to work as hard to get to it.

Definitely hard shell crabs or soft shell crabs! Hard shell crabs! caught fresh and brought home to be cooked in a BIG pot with beer and and "Old Bay" seasoning! Cooked until they just come to a boil. The fire turned off and left for 5 to 10 minutes. Transferred to a LARGE container, covered with ice and left to cool. Get that 1/4 keg! Ice it! S-P-R-E-A-D that old newspaper. Call a few friends and neighbors. Put on some great music! AND enjoy each other's company! Soft shells! (Too bsd the fresh ones are only available a couple months - late May & June) Prepped by cutting off the eyes and removing the lungs (devil's fingers or dead man's fingers) Dredged in flour. dipped in freshly beaten egg. Sauteed in clarified butter! Served with a couple veggies or potatoes! A few dashes of hot sauce! OOOOooooooooohhhhh man!!!!!!!!!!!! They are GREAT! Thanks for asking your Q! I enjoyed answering it! Here in Maryland we can get all the crabs we want by just walking to the end of the pier and you catch them yourself. I never get enough lobster.
