Store bought I like the crunchy ones. Soft cookies bought at the store just don't taste right. Home-made cookies I like somewhat softer just fine, but crunchy is good with those as well. And with milk, gotta have the ice cold milk wit dem cookies!

Both kinds. Depends on the cookie. A tuille is meant to be very hard and crisp and a macaroon just has to have a soft center. And there are thousands more.
