Currently: Emmental. I've tried the President brand, and it is simply awesome. Even beats out my former favorite: sharp cheddar. Such flavor! I also love a nice, smokey Gouda.

Pepper jack or Monetery jack for sandwiches, although swiss goes with ham. Italian blend for pizza and pasta, Mexican blend for beans and tacos, etc. String cheese for fun!
