Yes it will, although you usually need to let the dough get back to room temp before you bake it the next day. The overnight method is exactly how I proof my sourdough bread. It develops more flavor.

A warm moist place, but not too moist, is best. My mom used to make cinnamon rolls and she would only put it on a window sill for about 2 hours. Sometimes the yeast activated, other times, I don't know what happened but it wasn't all that good.
