Yup, sear the scallops well, the remove them and toss in some garlic a shallot and brown a bit then a splash of champagne, reduce a bit then add in some heavy cream simmer then return the scallops to the sauce and toss them with the sauce and serve then, Delish stuff!

The only time I get to eat scallops is when I eat at a Chinese restaurant. But I love them to death.
