I don't peel potatoes or any root veggie. Most of the nutrients and vitamins are in the skins.

Most I use personally I keep the skin on. Maybe just sweet potatoes and onions do I take skin off. All the rest, keep their skin.

Lots of them! Tomato Potato Carrots Cucumbers Zucchini (sp) Yellow Summer Squash Green Beans Peas N/a for things like cabbage, brussel sprouts, lettuce, brocolli, etc. And while I'm here .... three cheers for our veggies! LOL

cabbage, cauliflower, brussels (except I don't eat them), all the brassicas, really. Potatoes (sometimes). Courgettes, peppers, asparagus. Carrots, if they are yummy and fresh.. Ice cubes - ok, so they are not vegetables, but I am just checking to see if you actually read the whole message

Almost all of them. A good portion of fruits and vegetables have the best nutrients in their skin or rind. In fact, I can't think of a vegetable off the top of my head that we peel at our house. We just wash them real well.
