Ok my recipes are not very hard but they have no measurements just approximations, you can use more or less of things you would like more or less of, that being said, start cooking. I use a three gallon soup pot so I make a lot. In the pot put in some ham, I use about 2 pounds of ham and smoked ham hock mix. Cover with cold water and bring to a boil, reduce heat and simmer for about 3 hours. Add at least 1 good size diced onion,3 to 6 cloves of garlic chopped, 6 to 10 peeled and diced carrots, 5 or more diced ribs of celery, 2 or 3 tablespoons of chopped parsley, 5 peppercorns, water to cover, and simmer for about an hour. As the water lever lowers add beer, I use 3 bottles of Leinenkugel’s Honey Weiss. In a small pan cook some wild rice, so you have 2 to 3 cups when cooked-rinse and drain when tender. Ok so now I add 1 large can of cream of chicken soup, 2 to 3 cups of shredded colby/jack cheese, and a pint of cream, and the wild rice, bring just to a simmer again, but be careful at this point the soup will scorch easily. Serve and enjoy!!

I make Beer-Cheese soup one day a year only... Super-bowl Sunday. I was out of town on business last year and didn’t make it boy were my chums pissed. I’ll see if I can steal some ideas I modify mine slightly every year and I do very little measuring but Ill be happy to share a few of my tricks with you.

I've got some great sausages with chunks of cheese on them. They would go great in beer cheese soup! What a wonderful idea:-)
