Most of the things I really love have been mentioned - but here are another couple: La Réjouissance from Handel's music for the royal fireworks. Mozart's Musical Joke Mars - the bringer of war Jupiter - the bringer of jollity Saint Saens: the finale from the Organ Symphony! wow!!!!!!!! Troika Rachmaninoff Rhapsody on a Theme of Paganini 18th Variation and sooooooooo many more ... I do not have room for them all! oh.. one more - well loads more actually - but all Handel: Zadok the Priest - especially that fantastic organ introduction For unto us a child is born, from Messiah and then finally - volume up? ready for it? here goes: Sarabande!
